Black pepper

Black pepper is one of the basic ingredients used to season many Thai dishes. One should always use whole peppercorns, crushing the seeds just before using. Do this with a pepper mill, or with a pestle and mortar. The mount used will vary according to individual taste. Black pepper has a quite intense sharpness and a very spicy flavour.
