Shiitake Mushrooms

The shiitake mushroom was not used as a traditional ingredient in Thai cooking, but is gaining now more and more importance as an ingredient also in traditional recipes. The flavour is more intense than the usual Thai mushroom, the straw mushroom. You can buy fresh shiitake mushrooms in most good Thai markets, and in Asian food outlets across Europe. Dried mushrooms must be thoroughly soaked and cleaned before use.
