Christmas bakery at Lake View Restaurant in Udon Thani

Since March 2016 a German-run restaurant and bakery in Udon Thani has been enthusiastically serving its customers with fresh cuisine and German bakery products. From now on, they now will feature Christmas specialties from the bakery, thanks to the baker Robert, who trained his team to produce the world-famous treats from Germany in Udon Thani.



We talked to Robert from Lake View Restaurant & German Bakery and asked about his products.
Udon-News: Robert, you seem to have such a close connection with the holiday season, which is not celebrated in Thailand, that you are now producing Christmas bakery products yourself.



Robert: Christmas, without the traditional Christmas baking? Unthinkable for me! So I decided to make a small selection of the traditional favourites, including, of course, Christmas stollen, gingerbread, cinnamon stars and marzipan!


Udon-News: Then please tell us what you use for your Christstollen from Udon Thani.





Robert: Our Christmas stollen are made with a lot of butter and almonds. Orangeat, lemon, raisins and sultanas are of course soaked in good Meyer's rum overnight.





Udon-News: That sounds very delicious! Please tell us what the other goodies are.




Robert: Yeah, sure! Our gingerbread includes eight Christmas spices; cardamom, cinnamon, cloves, coriander, mace, nutmeg, ginger and spice. This mixture of spices of our own composition provides the typical gingerbread flavor. Rye flour, wheat flour, honey, brown sugar and ground almonds ensure the right consistency.



We make our marzipan ourselves. According to German tradition, with at least 50 percent almonds, to qualify as 'premium marzipan'. Shaped in the form of marzipan bread and covered with chocolate.




For our cinnamon stars we use a lot of ground almonds, sugar, cinnamon and whipped egg whites.
